Blogmas Day 21: Snowflake Cupcakes

Snowflake cupcakes or baby shower cupcakes? I did intend for these to be festive, but they turned out to look like something you’d take to a baby boy’s baby shower. I also have Chocolate Orange Brownies, which turned out a lot better.
The recipe is really simple, and they taste really good, but the decorating took a little while longer, as there was more too it, and as I still don’t really know what I’m doing they don’t look amazing, but the effort was there.

Ingredients: 

2 Large Eggs
115 Grams Caster Sugar
115 Grams Butter
115 Grams Self Raising Flour
1 Tablespoon Cocoa Powder
Half Teaspoon Baking Powder

Icing:

200 Grams Icing Sugar
Water

Decorations:

Blue Tube of Icing
Silver Spray
Snowflake Sprinkles
Chocolate Stars

 Method:

 

1. You’re going to want to start by pre-heating the oven to 190c or Gas 5, depending on which one you have. You can also set your cases ready for the mixture. I got mine from Morrisons, and I picked these ones because they were the only ones that looked slightly festive. They also had a cute little quote on the bottom.

2. Now mix together the butter and sugar until the mixture is light and fluffy.
 
3. After this add one of the eggs to the mixture and mix together, then add the other egg and do the same.
4. Next sift the flour into the mixture and then do the same with the cocoa powder and baking powder.

5. Once the mix starts to resemble cake mix you can go ahead and add it to the cases. You can add as much or as little as you would like, depending on what size you want your cakes. Next put them in the oven for 13 minutes.

Once your cakes are out of the oven, it’s best to let them cool and start on the icing. As you don’t want to apply icing to warm cakes.

Icing 

1. For the stars you can buy them packaged, and then you’ll need to set them out on some kitchen roll. Then get your spray, give the can a shake and then spray all over. They need numerous layers to get an opaque colour, and I didn’t have the patience to wait for them to dry, as it felt like forever!

2. You can now go onto the icing, get your icing sugar and add a tablespoon of water and mix. I carried on doing this until the mix wasn’t too stiff, but not too runny either.
3. I then used a knife to spread the icing all over the top of the cupcake and whilst it was still wet, I used the small tube of blue icing to create a swirl on the top. I then stuck the star on and sprinkled on some snowflake sprinkles
    And there we have it! Some Snowflake Cupcakes!
