It’s been a while hasn’t it? I did actually make this in May, but never got around to posting it here. Which means you’ll be getting two baking posts this month.
Banoffee Pie is a classic, and I have been meaning to make this for years. This recipe is from Tanya Burrs cookbook, and I have been meaning to give it a go ever since I bought it. For this years: ‘bake something new every month’, this recipe came to mind, and I knew I had to finally try it.
This recipe is super simple, and is best served fresh. As the bananas will start to brown over time. The only thing I changed is the biscuit base, as I don’t like hobnobs, so I used digestives instead. I also only needed two of the four bananas. The recipe says to use a 21cm round loose bottomed tart tin, but I used the cake tin I used for my Raspberry and White Chocolate cake.
Ingredients:

400g Digestives
150g Butter
1 Tin Carnation Caramel (397g)
4 Ripe Bananas
400ml Double Cream
1 Chocolate Flake
Method:
1 . Crush the biscuits until a fine crumb in a bowl and then set aside.
2. Melt the butter, I did this in a saucepan then add to the biscuit crumbs.
3. Mix the melted butter and biscuit crumbs until everything is evenly covered.
4. Then press into the tin and bring up the sides to help keep the toppings secure. I struggled to take it up the sides, so I pressed it down a little more in the centre and left the edges up a little bit. Leave to set in the fridge for 30 minutes.
5. Pour the caramel on top of the base and spread it out evenly. Then leave to set in the fridge for 15 minutes.

6. When ready to serve slice the bananas thinly and layer them over the caramel.
7. Whip the cream until soft peaks form, then place on top of the bananas. I struggled with the whipped cream, but only because I didn’t have my mixer on high enough for the first ten minutes, so it took a lot longer than it should have done.
8. Crumble the flake over the top and serve straight away.
