
With October fast approaching its time for Septembers baking post. This month I decided to go with one of my all time favourite combinations; banana and chocolate. I got the recipe from BBC Food, and it did not disappoint. Even though I did leave out the oil, and the chopped nuts topping.

I loved these, and would definitely make them again, but it wouldn’t be me without something go wrong. Even though they were more to do with me than the recipe. As I assumed I had lots of flour, however I had barely any. Then my bananas were more mouldy than ripe, so I had to buy ones and ripen them myself.
How to Ripen Bananas
I used the oven method, as it’s the quickest. To do this you’ll need yellow bananas that aren’t quite ripe enough to bake with, but you don’t want them to be green.
Line a baking tray with baking paper, then add the bananas. Heat the oven to 180C or 160C fan, and cook the bananas for thirty minutes. I checked on them after twenty minutes and they were completely black and ready to come out, so it’s worth keeping an eye on them as they can burst if left in for too long.
There you have it, you now have ripe bananas.
This is How to Bake Banana and Chocolate Muffins.
Ingredients

75g Unsalted Butter
275g Plain Flour
1tsp Bicarbonate Soda
2tsp Baking Powder
One Quarter tsp Ground Cinnamon
120g Caster Sugar
100g Milk Chocolate Chips
One Quarter tsp Fine Salt
100ml Milk
1 Large Egg
1tsp Vanilla Extract
250g (around three) Large Mashed Bananas
Method
1 . Preheat the oven to 220C or 200C Fan, and line a muffin tray with cases.
2. Melt the butter and then leave to cool for a few minutes.
3. In a large bowl combine the flour, bicarbonate of soda, baking powder, cinnamon, sugar, chocolate chips and salt.
4. In a separate bowl whisk the: melted butter, milk, egg and vanilla. Then add the mashed banana and combine.
5. Combine the dry and wet ingredients and fold together gently. The flour should be just wet, but you don’t want the mixture to be too smooth.
6. Add the mixture to the cases, and bake for 13-15 cases until golden. At this point a skewer poked in the middle should come out clean.
7. Leave to cool on a wire rack, and enjoy within two days.

I think that my husband would like these, but I haven’t eaten bananas since ending up in hospital last year and the last thing I had eaten was a banana, so I always associate it with that! Ridiculous, I know! x
