
It seems like all I write nowadays is baking posts, but this should be the last one for a while. Well, until August anyway. It’s actually getting hard to pick new things, and I know cupcakes should be next, but I’m not ready to face the piping just yet. This month I decided to go for a baked cheesecake, and it was one of my favourites of the year so far.
For this recipe I went back to Jane’s Patisserie, as literally everything from her is incredible. I especially look forward to making the mini egg cookies every year.
Ingredients

For the Base:
400g Digestives
175g Unsalted Butter
For the Cheesecake:
300g Dark Chocolate
750g Full Fat Soft Cream Cheese
200g Caster Sugar
4 Medium Eggs
30g Cocoa Powder
1tsp Vanilla Extract
300ml Double Cream
For the Decorations:
100g White Chocolate
50g Chocolate Curls
Method
For the Base:
1 . Preheat the oven to 200°c or 180° for a fan oven, then line your tin with baking paper.
2. Crush the biscuits until they’re a fine crumb.
3. Melt the butter and then add it to the biscuit crumbs.
4. Press the mixture into the lined tin and bake for 10 minutes.
For the Cheesecake:
1 . Once the base has baked, change the temperature of the oven to180°c or160°c for fan, and put the base to one side.
2. Melt the dark chocolate; I did this in the microwave.
3. In a new bowl, add the soft cream cheese and beat on its own until smooth.
4. Add the eggs, making sure to beat well every time you add one.
5. Add the caster sugar and beat until combined.
6. Add the cocoa powder and vanilla extract, then beat again.
7. Then fold through the cooled melted dark chocolate until smooth.
8. Add the double cream and fold through until smooth.
9. Spread the mixture over the biscuit base, and bake in the oven for 35 minutes.
10. Once baked turn the oven off and let the cheesecake cool inside the oven with the door slightly open for an hour.
11. Then remove from the oven and leave to cool in the fridge for 6+ hours.
For the Decoration:
1 . Once the cheesecake has set remove it from the tin.
2. Melt the white chocolate and drizzle it over the top, then sprinkle with chocolate curls.




There we have it, that was how to bake cheesecake bars.
