Is It Cheating If There’s No Baking Involved?
Ok, so this might technically be a little bit of cheating since there is absolutely no oven baking required, but I am still officially counting this for my “Bake Something New Every Month” challenge!
Normally for these challenge posts, I find a single recipe online, follow it to a T, and that’s that. However, after picking out my base recipe, I came across a stunning, similar creation from Phoebe Bakes and decided to combine the best of both worlds. The rich base formula comes from the legendary Milk Chocolate Rocky Road in the Finch Bakery recipe book, and the loaded topping inspiration comes from Phoebe Bakes.
This is the ultimate guide on how to make chocolate rocky road!
The Ultimate Loaded Ingredients List

Before you get started, gather up your ingredients. The beauty of this recipe is how incredibly customizable the chocolate mix-ins are.

500g Milk Chocolate

350g White Chocolate (for the top layer)

150g Unsalted Butter
-
125g Golden Syrup
-
100g Digestive Biscuits
-
75g Mini Marshmallows
-
400g Chocolate bars of your choice (I used a mix of Smarties, Maltesers, Crispy M&M’s, and Cadbury Caramel Nibbles)
Step-by-Step Method
Step 1: Prep Your Tin
Line a square baking tin with high-quality baking paper or greaseproof paper.
I used the exact same tin layout that I used for my Kinder Bueno Blondies. It gives you the perfect thick, chunky rocky road slices!
Step 2: The Chop & Mix
Set aside a handful of your favourite chocolate bars and mini marshmallows to use for decorating the top later. Take the rest of your chocolate bars and chop them down into chunks.
In a large mixing bowl, toss together the chopped chocolates, the mini marshmallows, and your digestive biscuits broken down into bite sized pieces.

Step 3: Melt the Base
Melt your unsalted butter, golden syrup, and milk chocolate together until completely smooth and fully combined.
Crucial Baker’s Warning: I would highly, highly recommend using the classic bain-marie method (placing a heatproof bowl over a saucepan of gently simmering water) for this step. I tried a different shortcut method initially and my chocolate completely seized up into a stiff, ruined clump. Gentle, indirect heat is your best friend here.
Step 4: Combine into the Tin
Pour the melted chocolate mixture directly over your dry bowl of biscuits and treats. Stir thoroughly until every single piece is completely coated. Pour the mixture into your lined tin and press it down firmly into the corners using the back of a spoon to create a solid, even layer.
Step 5: The White Chocolate Layer
Melt your white chocolate. I did this quickly in the microwave in short 20-second bursts, stirring in between, but you can absolutely use the bain-marie method again here if you want to be safe. Once smooth, pour the melted white chocolate completely over the top of your rocky road base, giving the tray a little gentle shake to help it even out into a smooth layer.
Step 6: Decorate & Set
Take the remaining chocolate bars and marshmallows you set aside in Step 2 and scatter them beautifully over the wet white chocolate layer. Pop the entire tray straight into the fridge and leave it to set until it is completely firm.





The Final Verdict: Absolute Perfection
Once it’s completely firm, lift it out of the tin using the baking paper and slice it into chunky squares with a hot knife. The crunch of the biscuits combined with the chewiness of the marshmallows and the rich layers of chocolate is absolutely incredible. It is sweet, indulgent, and the ultimate crowd pleaser.
